How to make it

  • Heat oil in large pot to 375
  • In mixing bowl, add cornmeal, flour, salt, baking powder, baking soda, and cayenne
  • In large mixing bowl, add jalapeno, corn, onion, and buttermilk
  • Add dry ingredients to wet ingredients all at once
  • Stir only enough to bring batter together; there should be lumps
  • Rest 10 minutes
  • Slice hot dogs lengthwise making long strips, 8 to a hot dog
  • Mix cornstarch and flour in mixing bowl
  • Coat hot dog in flour mixture and shake well to remove excess
  • Put hot dog strips in bowl of batter
  • One at a time, using tongs, put strips into oil
  • Fry until coating is golden brown, about 4-5 minutes
  • Remove to paper towels and drain

    Wynne!!! 8 strips from 1 dog?, how big are these things or have you been doing micro surgery on them, LOL, love the batter, nice and spicy.
