Bourbon Mashed Sweet Potatoes Recipe
BOURBON MASHED SWEET POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cannon Estate in Addison, Texas in 1990.

Ingredients
  • 8 medium sweet potatoes
  • 2 teaspoons salt
  • 1 tablespoon granulated sugar
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon salt more
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup cream
  • 4 tablespoons butter
  • 1/4 cup white corn syrup
  • 1/2 cup bourbon

Directions
  1. Peel sweet potatoes and cut into quarters then cut each quarter in half again.
  2. Place in a pot and cover with cold water then add salt and granulated sugar.
  3. Bring to boil then reduce heat and simmer 15 minutes or until very tender.
  4. Drain potatoes and return to pan over very low heat.
  5. Return to burner until all moisture has evaporated about 2 minutes then remove from heat.
  6. Rice or mash until very smooth then stir in brown sugar.
  7. Combine 1/2 teaspoon salt, pepper, cinnamon and nutmeg in small bowl then stir into potatoes.
  8. Place cream and butter in saucepan and heat until butter melts then stir in potatoes.
  9. Stir in corn syrup and bourbon.
