Easy Pumpkin Cupcakes

Autumn is in the air! Pumpkin Cupcakes are the way to go. Here is an easy recipe that you can whip up quickly. Enjoy!
Ingredients
- 1-15 oz can of pumpkin shopping list
- 3 eggs shopping list
- 1/2 cup veg. oil shopping list
- 1 tsp. baking soda shopping list
- 2 tsp. cinnamon or pumpkin pie spice shopping list
- 1 pkg. yellow cake mix shopping list
- cream cheese frosting shopping list
How to make it
- Mix together: pumpkin, eggs, oil, baking soda, and spice.
- Add the cake mix.
- Beat for 1 min. on low.
- Beat an addition 2 min. on high.
- Fill cupcake liners 3/4 full.
- Bake at 350 for 20 min. or until toothpick come out clean.
- Cool
- Frost with frosting of choice (cream cheese is our favorite)
