Hot Pepper Relish

- 6 cups of finely chopped sweet yellow and red bell peppers. shopping list
- 20 habanero peppers seeds removed shopping list
- 2 teaspoons of sea salt shopping list
- 2 cups of sugar shopping list
- 1 quart of cider vinegar shopping list
How to make it
- Wear gloves while handling the hot peppers.
- Process the peppers until medium size pieces.
- Combine the peppers with the sea salt and let stand for 2 hours.
- Drain juices into pot.
- Add sugar and vinegar and cook stirring constantly until thickened about 40 minutes on medium.
- Pour or ladle into jars and seal leaving ½-inch head space.
- Process in a hot water bath for 10 minutes.
