Hot Pepper Relish Recipe

How to make it

  • Wear gloves while handling the hot peppers.
  • Process the peppers until medium size pieces.
  • Combine the peppers with the sea salt and let stand for 2 hours.
  • Drain juices into pot.
  • Add sugar and vinegar and cook stirring constantly until thickened about 40 minutes on medium.
  • Pour or ladle into jars and seal leaving ½-inch head space.
  • Process in a hot water bath for 10 minutes.
