How to make it

  • Preheat oven to 350.
  • In a food processor, finely mince the garlic.
  • Add artichokes and process until well chopped. (You can do these first two steps by hand with a garlic press and a knife if you like bigger chunks. But DO NOT try it with a blender, as the artichokes just gum up the blades.)
  • Place processed garlic and artichokes in a medium bowl. Add mayo and parmesan cheese and mix well.
  • Spread in a glass baking dish. (8x8, 9x9, round 2 quart, or even a pie plate will work.)
  • Bake for 30 minutes or until top is golden brown.
  • Serve with crackers, bread cubes, or sliced veggies.

    Yep, I've eaten this a time or two - I have passed on my love of garlic to you, haven't I??? Who'd a thought, 25 years ago, that you'd even TOUCH a clove of garlic, let alone EAT it?!?!?
