How to make it

  • Heat oil in 10' skillet over med-high heat. Add the onions and cook till they begin to brown,stirring occasionally. Reduce the heat to medim. Cook till the onions are tender and caramelized,stirring occasionally.. Remove skillet from heat.
  • Heat the broth,black pepper,carrots and celery in 4 qt. saucepan over med-high heatto a boil. Stir the pasta and chicken in saucepan. Reduce heat to medium. Cook for 10 mins. or till pasta is tender. Stir in the onionsand serve immediately.

    Ain't this stuff great? I make a similar batch. Making soup when you have left over chicken is a favorite of mine. Often I'll poach chicken in chicken broth ahead of time for tortillas or sandwiches. (Posted.) It makes doubly good broth for soups that way.
    I throw the uncooked noodles into a batch of soup, as you do. Some foodies may raise an eyebrow because the starch gets into the soup. The way I see it, if I'm making a smallish batch, I can eat it before the food police arrive. ;^)
