Greek Salad Pita Pockets Recipe
This is a simple and healthy lunch that will leave your taste buds dancing with joy!

Ingredients
  • 8 grape tomatoes
  • 8 pitted kalamata olives
  • vinaigrette to taste (a garlic vinaigrette is best)
  • crumbled feta cheese to taste
  • 1/2 pita pocket, preferably whole wheat

Directions
  1. Using a kitchen shears, slice each of the tomatoes and each of the olives in half into a small bowl.
  2. If your olives are packed in a vinegar brine, pour a small amount (1 tbsp?) over the tomatoes and olives. (optional)
  3. Pour over vinaigrette.
  4. Stir feta cheese into all ingredients.
  5. Gently stuff a pita pocket. (These often fall apart, so sometimes I just tear the pita into bite-sized pieces, throw it in the bowl with everything and eat it with a spoon.)
  6. Devour!

Sounds really good and healthy, I make something like this but usually add an avocado to it, sliced thinly.
