Pomegranate Soup - Asheanar

- 3/4 cup lentils, large flat brown or green preferable shopping list
- 2 tablespoons butter or margarine shopping list
- 1 medium onion, chopped shopping list
- 8 cups water (2 quarts) shopping list
- 1 cup long-grain rice shopping list
- 1 teaspoon turmeric shopping list
- salt and freshly ground pepper to taste shopping list
- 1/2 cup chopped fresh parsley shopping list
- 1/2 cup chopped green onions shopping list
- 1 cup pomegranate juice shopping list
- 3 tbls pomegranate seeds for garnish shopping list
- 1 tablespoon butter shopping list
- 2 tablespoons chopped fresh mint or 2 teaspoons crushed dried leaf mint shopping list
- 1 tablespoon raisins shopping list
- 1 lb ground beef, or minced venison, seasoned and shaped into meatballs shopping list

- 6 large pomegranates shopping list
- halve fruits and remove seeds in water shopping list
- the bitter yellow membrane will float while the seeds will sink shopping list
- strain seeds from water and pulse in a liquidizer till pulp shopping list
- strain pulp, squeese all liquids till juice extracted shopping list
How to make it
- Run cold water over lentils to clean them.
- Set it aside to drain.
- Melt 2 tablespoons butter in a large saucepan.
- Add onion and saute until tender.
- Add water, drained lentils, rice, turmeric, salt and pepper and meatballs.
- Bring to a boil.
- Reduce heat and cover.
- Simmer over low heat 40 minutes or until lentils and rice are tender.
- Open the pomegranate and extract the juice using a lemon squeezer. Or, separate the seeds
- Add the pomegranate juice along with parsley and green onions
- simmer about 15 minutes longer.
- Melt 1 tablespoon butter in a small skillet.
- Add mint. Saute until butter or margarine is golden brown. Pour over soup.
