- 16-18 whole chicken wings, separated into 32 - 36 pieces. discard tips or use them later to make stock for other recipes. shopping list
- 1 1/2 cups cornstarch shopping list
- 1 tsp salt shopping list
- 1/2 tsp white pepper shopping list

- SAUCE:- shopping list
- 3/4 cup white wine vinegar shopping list
- 3/4 cup white wine shopping list
- 2/3 cup sweet chili sauce shopping list
- 1 tsp pureed garlic (from a jar) shopping list
- 1/2 tsp dry mustard powder shopping list
- 4 Tblspn honey shopping list
- 1/8 tsp thyme shopping list
- 1/2 tsp paprika shopping list

- For thickening:- shopping list
- 1 tblspn corn starch shopping list
- 2 Tblspn water shopping list

- 1 2/3 cups oil - for frying shopping list
How to make it
- Place the 1 1/2 cups of cornstarch, salt & pepper in a large plastic bag & shake to combine
- Add wing pieces to the bag & shake until the wings are well coated
- Tapping off excess cornstarch, lay wings out on a baking sheet & set aside
- .
- SAUCE:-
- Combine all 8 sauce ingredients in a Wok.
- Heat on medium until hot & then turn to low & simmer for about 15 mins
- Mix together the 1 Tblspn corn starch & 2 Tblspn water & stir into the sauce to slightly thicken
- Remove from heat & set aside
- The taste of the vinegar will be quite strong but will disappear when wings are baked
- .
- WINGS:-
- In a 2nd Wok, heat oil on med/high
- Fry wings in 2 or 3 batches about 7 - 8 mins on each side or until no longer pink inside
- Drain on paper towels
- Place the pan of sauce back on the burner on medium/low
- Carefully add the whole batch of wings to the sauce & turn with wooden spoons until all are well coated
- Simmer for about 10 mins, turning wings several times
- Sauce will thicken & coat wings
- Remove from heat
- At this point you can cool & store in plastic container in the fridge until ready to serve or bake right away
- To bake:-
- Pre-heat oven to 425 degrees
- Place wire racks on baking sheets & place wings in a single layer on racks
- Bake for approx 20 - 25 mins, turning once 1/2 way through baking time
- Serve hot or cold
