Orange Pound Cake

- 1 3/4 cups (3 1/2 sticks) unsalted butter - softened shopping list
- 2 3/4 cups sugar shopping list
- 8 eggs shopping list
- 1 tsp orange extract shopping list
- 2 tsp grated orange rind shopping list
- 3 cups all-purpose flour shopping list
- 1 Tblsn baking powder shopping list
- 1 tsp salt shopping list
- 3/4 cup fresh orange juice - from 3 oranges shopping list

- Drizzle:- shopping list
- 3/4 cup icing sugar shopping list
- 1 Tblspn orange juice mixed with 1 tsp water shopping list
How to make it
- Pre-heat oven to 350 degrees
- Butter & flour 10" tube pan - tap out excess flour
- Combine flour, baking powder & salt in a small bowl & set aside
- In large bowl of an electric mixer, beat butter until creamy
- Gradually beat in sugar until fluffy
- Scrape down the bowl
- Add eggs one at a time
- Beat in extract & rind
- On medium speed, gradually beat in flour mixture alternating with orange juice
- Beat 2 mins, scraping down bowl occasionally, until thick & creamy
- Pour into prepared pan
- Bake at 350 for 35 mins. Lower heat to 300 & bake for an additional 45 - 50 mins or until a toothpick inserted in the center comes out clean
- Cool in pan on wire rack 15 mins
- Turn cake out onto wire rack & cool completely

- In a small bowl, whisk together the diluted orange juice & icing sugar until smooth
- Drizzle over cake. Let icing set before cutting & serving
