How to make it

  • Pre-heat oven to 350 degrees
  • Butter & flour 10" tube pan - tap out excess flour
  • Combine flour, baking powder & salt in a small bowl & set aside
  • In large bowl of an electric mixer, beat butter until creamy
  • Gradually beat in sugar until fluffy
  • Scrape down the bowl
  • Add eggs one at a time
  • Beat in extract & rind
  • On medium speed, gradually beat in flour mixture alternating with orange juice
  • Beat 2 mins, scraping down bowl occasionally, until thick & creamy
  • Pour into prepared pan
  • Bake at 350 for 35 mins. Lower heat to 300 & bake for an additional 45 - 50 mins or until a toothpick inserted in the center comes out clean
  • Cool in pan on wire rack 15 mins
  • Turn cake out onto wire rack & cool completely
  • .
  • In a small bowl, whisk together the diluted orange juice & icing sugar until smooth
  • Drizzle over cake. Let icing set before cutting & serving
