A mixed berry cous cous with fruits, mint, walnuts and greek yogurt...very beautiful and yummy

Ingredients
  • Cous cous can buy whole wheat at trader joes or instant cous cous ....one cup
  • 2 cups apple and cranberry juice...(one cup each) can buy lower sugar version, as well of these juices
  • drizzle of brandy (optional but good)
  • 1 cinnamon stick
  • fresh mint
  • walnuts (just a few)
  • 2 teaspoons orange zest or use orange peel spice
  • raspberries about one cup
  • blueberries about one cup
  • 1 cup strawberries
  • Now, 8 oz Greek Yogurt...try fat free fage greek yogurt at trader joes...thick and delicious
  • 2 tablespoons golden syrup or try sugar free syrup
  • (touch of brandy is optional)

Directions
  1. Pour the cous cous in a bowel....
  2. Pour the apple and cranberry juice into a saucepan(optional add a drizzle of brandy) and add the cinnamon stick. Cover and bring to a boil then remove from the heat and pour over the cous cous. Cover the couscous with plastic wrap and leave for about five minutes or until all the liquid has been absorbed. remove the cinnamon stick from the bowel.
  3. Now fold in the orange zest and most of the raspberries, blueberries, and strawberries. Spoon this mixture into four serving bowls and sprinkle with the remaining berries. Serve with a generous dollup of the greek yogurt then drizzle with golden syrup...garnish this beautiful dish with fresh mint leaves and walnuts and for a really great flavor drizzle a dash of brandy into the apple and cranberry juice.... This is a beaufiul dish if you place the fresh fruit on the bottom and in the middle and top of the cous cous with fresh mint on the sides surrounding it.....and place the yogurt right on the top....serve with a great cup of coffee .
