How to make it

  • Preheat oven to 350 degrees.
  • Grease a 9" x 5" loaf pan, and line with two strips of waxed paper (one to fit length of pan, one to fit width).
  • In a small saucepan, combine raisins and water. Bring to a boil, then reduce heat; cover and simmer 1 minute then remove from heat. Stir in applesauce and cool to lukewarm.
  • Meanwhile, sift together flour, baking soda, cinnamon and cloves; set aside.
  • Cream butter and sugar together until light and fluffy.
  • Beat in egg and vanilla.
  • Add dry ingredients alternately with applesauce mixture, stirring each time until just blended.
  • Stir in nuts, if desired.
  • Pour mixture into greased and waxed paper lined 9" x 5" loaf pan.
  • Bake 1 hour or until toothpick inserted in center comes out clean.
  • Cool in pan on rack 10 minutes; Remove from pan and peel off waxed paper. Cool completely on rack.
  • Note: You can also use smaller loaf pans - just adjust baking time accordingly.
