Bright-Eyed Susans Recipe
A nice version of thumbprint cookies - cookie dough is rolled in nuts, baked then filled with a dollop of jam, preserves or jelly. I like to use two contrasting jams, such as seedless raspberry and apricot, to make for a more colorful platter.

Ingredients
  • 2 cups flour
  • 1/2 tsp. baking powder
  • 1 cup butter
  • 1/2 cup sugar
  • 2 tbsp. water
  • 1 tsp. vanilla extract
  • 1 egg, separated
  • 1 1/4 cups finely chopped nuts
  • Jam or jelly

Directions
  1. Preheat oven to 350 degrees.
  2. Sift together flour and baking powder; set aside.
  3. Cream together butter and sugar until light and fluffy.
  4. Add water, vanilla and egg yolk and blend until combined.
  5. Blend in flour mixture until thoroughly mixed.
  6. Form dough into 1" balls. Roll in slightly beaten egg white, then in nuts, and place on lightly greased baking sheets.
  7. Bake for 5 minutes, then remove from oven and press thumbprint in each ball. Return to oven and bake 8 to 10 minutes, or until golden.
  8. Remove from oven and fill centers with brightly colored jams or jellies.
  9. Cool completely on wire racks.
