Butterscotch Chewy Cake

- 1 1/2 c. sifted flour shopping list
- 1 1/2 tsp. baking powder shopping list
- 4 medium eggs (about 3/4 c.) shopping list
- 2 c. brown sugar, firmly packed shopping list
- 1 Tbsp. butter shopping list
- 1 1/2 c. chopped pecans or walnuts shopping list
- 1 tsp. vanilla shopping list
How to make it
- Sift togheter flour and baking powder.
- Beat eggs with rotary beater in top of double boiler just until blended.
- Stir in the brown sugar and butter.
- Stir constantly over rapidly boiling water just until hot, about 5 minutes.
- Remove from heat.
- Add the sifted flour and baking powder all at once.
- Mix until well blended.
- Stir in vanilla and nut meats.
- Turn into well greased and lightly floured baking pan, 13 x 9, and bake in moderate oven 350 or until cake springs back when touched lightly in center with fingertip, 25-30 minutes.
- Serve warm for a dessert with ice cream or whipped cream; or cut into small bars and serve when cold.
- Cut in pan and remove with spatula.
