This moist cookie brings back memories of Mom baking in the kitchen and trying to keep all the kids out of the dough long enough to actually bake some cookies.

Ingredients
- 1 cup brown sugar
- 1/2 cup butter
- 1 egg
- 2 cups flour
- 2 tsp. baking powder
- pinch of salt
- 1 tsp vanilla
- 1 cup chopped pecans
Directions
- Cream butter and sugar
- Add egg and beat well
- Add dry ingredients and mix until incorporated
- Stir in pecans
- Roll dough into a 2 to 3 inch log depending on how large you like your cookies
- Wrap in plastic wrap or wax paper
- Refrigerate for at least one hour
- Preheat oven to 350 degrees
- Slice cookies
- Bake for 12 minutes (don't over cook)
- Remove to cooling rack
- Store in airtight container

Thanks for your comment. They are so simple and the dough keeps in fridge really well, so you can bake a few at a time and have fresh cookies whenever you like.
