Ingredients

How to make it

  • Put your chickpeas in the pot with 1 cup of water
  • Add bay leaf and your finely chopped onions, and chicken broth into chick peas
  • simmer for about 5-6 mins
  • Remove HALF of your mixture (chick-peas, onions, broth and water) and puree it with a blender. Make sure you have a good amount of the liquid when blending, so that it blends well.
  • Pour the pureed chick peas back into the pot
  • Add all your other veggies, salt, and black pepper and the herbs mentioned above
  • Mix together with oilive oil
  • If thick, add water as you stir. Your soup should be hearty but not extra-thick.
  • Cover for about 20mins
  • Let stand for about 3mins
  • Viola!
