Delicious And Very Healthy Chick Pea Soup Garbanzo

- Chick peas (Garbanzo in the can) 2 small cans or 1 big one shopping list
- 1 medium-sized carrot (diced) shopping list
- 1/2 red bell sweet pepper (diced) shopping list
- 1 stalk of broccoli- single one with stalk (not entire broccoli, just one crown) (chopped) shopping list
- 1 medium (yellow) onion (chopped finely) shopping list
- 1/2 of a medium- sized sweet potato. (chopped and boiled till tender- but not too tender) shopping list
- 1 garlic, crushed or finely chopped shopping list
- 1 bay leaf shopping list
- Thyme- quarter teaspoon shopping list
- Oregano- 1/4 teaspoon shopping list
- Rosemary- 1/4 teaspoon shopping list
- chicken broth (1 sachet or 1 cube) shopping list
- salt to taste shopping list
- Black pepper- freshly ground shopping list
- oilive oil - (2 tablespoons) shopping list
How to make it
- Put your chickpeas in the pot with 1 cup of water
- Add bay leaf and your finely chopped onions, and chicken broth into chick peas
- simmer for about 5-6 mins
- Remove HALF of your mixture (chick-peas, onions, broth and water) and puree it with a blender. Make sure you have a good amount of the liquid when blending, so that it blends well.
- Pour the pureed chick peas back into the pot
- Add all your other veggies, salt, and black pepper and the herbs mentioned above
- Mix together with oilive oil
- If thick, add water as you stir. Your soup should be hearty but not extra-thick.
- Cover for about 20mins
- Let stand for about 3mins
- Viola!
