Portuguese Style Tomato Soup And Poached Eggs Recipe

Ingredients
  • 2 pounds red plum tomatoes, seedless and skinless, roughly chopped
  • 1 big yellow onion, finely sliced
  • 3 tbls olive oil
  • 2 garlic cloves, mashed
  • 6 tbsp parsley, finelly chopped
  • 1 small bay leaf
  • 4 eggs, poached
  • 4 toasts of sour dough bread
  • salt and pepper to taste
  • fresh peppermint leaves to garnish

Directions
  1. Cook the onion in olive oil over low heat until it softens.
  2. Add the tomatoes, mashed garlic, parsley and bay leaf.
  3. As soon as it starts to boil add 3 cups of water and let it all cook for at least 30 minutes.
  4. It is important that the tomatoes have time to release all the natural juices and cook well.
  5. Add salt and pepper to taste and let it cook for another 15 minutes.
  6. Meanwhile poach the eggs and make the toasts.
  7. Place the each toast on individual soup plates, pour the soup over and one poached egg on each plate.
  8. Garnish with fresh peppermint leaves.
