Grilled Pineapple Glazed Pork Recipe
Found this in my hometown newspaper and it is great. So I thought I would share. Even added the stuff they listed at the end about the fat and calories. Hope you enjoy! We sure did...

Ingredients
  • 1/2 cup pineapple juice
  • 1/4 cup dark brown sugar
  • 2 cloves garlic, crushed
  • 1/2 teaspoon ground ginger
  • 3/4 pound pork tenderloin
  • Vegetable oil spray

Directions
  1. Preheat grill or broiler.
  2. Add pineapple juice, brown sugar, garlic, andginger to a small pan.
  3. Stir and cook over high heat for 5 minutes or until sauce thickens to a syrup consistency.
  4. Remove fat from pork and cut the tenderloin nearly in half lengthwise so that it opens like a book.
  5. Do NOT cut it all the way through.
  6. Spray both sides with vegetable oil spray.
  7. Grill 3 to 4 inches away from heat for 5 minutes.
  8. Turn and spoon half of the prepared glaze on the cooked side.
  9. Grill 5 more minutes, or until the meat thermometer reads 160 degrees.
  10. Remove from grill and spoon remaining glaze on unglazed side.
  11. Cut into slices and serve, spooning all the juices over the slices.
