Fiesta Time Meatloaf

- 2 lb. lean ground beef shopping list
- 1 (6 oz.) pkg. stuffing mix for chicken shopping list
- 1 c. water shopping list
- 2 eggs, lightly beaten shopping list
- 2 tsp. chili powder (or more if you like it hot!) shopping list
- 1 tsp. cumin shopping list
- 1/2 cup chunky-style salsa, divided shopping list
- 3/4 mexican cheese blend (or your favorite type!) shopping list
How to make it
- Preheat oven to 375°F. Mix all ingredients except 1/4 cup of the salsa and the cheese.
- Shape mixture into oval loaf in 13x9-inch baking dish; top with the remaining 1/4 cup salsa.
- Bake 1 hour or until cooked through (160ºF).
- Sprinkle with the cheese; continue baking 5 min. or until cheese is melted. Let stand 5 minutes before cutting into eight slices.
- If you like, serve with taco condiments.

I agree that this would be a great change from the regular meat loaf... What about adding some drained crushed or chunked pineapple,too? Mmmm!
