Pepper - Capsicum- Rolls

- 1 - large red pepper( capsicum) shopping list
- 2 -ounces-( 60 gms) cheddar cheese grated shopping list
- 1- ounce ( 30 gms) fresh parmesan cheese grated shopping list
- 2- tablespoons whole egg mayonnnaise shopping list
- 2- tablepoons finely chopped fresh parsley shopping list
- 1- teaspoon chopped fresh thyme shopping list
- 1 - teaspoon chopped fresh oregano shopping list
- 2-drops Tabasco sauce shopping list
- 10 - slices fresh bread shopping list
- 1-1/2 ounce ( 45 gms) butter , melted shopping list
- paprika for garnish shopping list
How to make it
- Halve the red pepper and remove the seeds and membrane.
- cook skin - side -up under a hot grill until the skin is black and blistered.
- place in a plastic bag and leave to cool, then peel.
- finely chop the flesh and combine in the bowl with the cheddar, parmesan cheese,mayonnaise,herbs, tabasco sauce, salt and pepper to taste.
- cut the crusts from the bread, flatten th slices well with a rolling pinand brush both sides with melted butter.
- spread the pepper mixtureon each slice, leaving a 1 cm (1/2 ) inch border..
- roll upand secure each with a toothpicks.
- cover and refrigerate for at least 2 hours.
- preheat oven to 350 degress f. ( 180 c) cut each roll in half and secure again with the toothpicks..
- bake on a baking sheet for about 10 to 12 minutes, or until the rolls are crisp and pale golden in color.
- sprinkle with paprika and serve warm
- note ....you can use any creative filling you like ....i tried pepperoni and cheese .. those were very good too.....
- you can make these up in advance
