How to make it

  • Halve the red pepper and remove the seeds and membrane.
  • cook skin - side -up under a hot grill until the skin is black and blistered.
  • place in a plastic bag and leave to cool, then peel.
  • finely chop the flesh and combine in the bowl with the cheddar, parmesan cheese,mayonnaise,herbs, tabasco sauce, salt and pepper to taste.
  • cut the crusts from the bread, flatten th slices well with a rolling pinand brush both sides with melted butter.
  • spread the pepper mixtureon each slice, leaving a 1 cm (1/2 ) inch border..
  • roll upand secure each with a toothpicks.
  • cover and refrigerate for at least 2 hours.
  • preheat oven to 350 degress f. ( 180 c) cut each roll in half and secure again with the toothpicks..
  • bake on a baking sheet for about 10 to 12 minutes, or until the rolls are crisp and pale golden in color.
  • sprinkle with paprika and serve warm
  • note ....you can use any creative filling you like ....i tried pepperoni and cheese .. those were very good too.....
  • you can make these up in advance
