Charlines Sweet Potato Casserole

- 4 cups sweet potatoes, peeled and cubed shopping list
- 2 cups white sugar shopping list
- 4 eggs, beaten shopping list
- 3/4 cup butter, melted shopping list
- 1 cup evaporated milk shopping list
- 1 teaspoon ground nutmeg shopping list
- 1 teaspoon ground cinnamon shopping list
- 2 cups miniature marshmallows shopping list
- 1 cup flaked coconut shopping list
- Topping: shopping list
- 1 1/2 cups crushed cornflakes cereal shopping list
- 1/2 cup packed brown sugar shopping list
- 1 cup chopped pecans shopping list
- 3/4 cup butter, melted shopping list
How to make it
- Preheat oven to 400.
- Boil sweet potatoes until tender and mash.
- Coat a 9x13 inch baking dish with butter.
- In a large bowl, mix the sweet potatoes together with sugar, eggs, 3/4 cup butter, evaporated milk, nutmeg, cinnamon, marshmallows and coconut. Scoop the mixture into the baking dish.
- Bake 20 minutes in the preheated oven.
- While baking, in a small bowl, mix the topping ingredients together. Spread the topping over the baked casserole.
- Return the casserole to the 400 degree oven and bake an additional 10 minutes.
