Red Hot Jelly Recipe
A fun jelly recipe I found that uses Red Hot candies - those tiny little cinnamon candies. This jelly is good on bagels with cream cheese, toast, muffins, scones, or biscuits! Cinnamony-sweet, but not too spicy. Fun for gift-giving, too!

Ingredients
  • 2 c. apple juice
  • 4 c. granulated sugar
  • 1/2 tsp. margarine
  • 1/3 cup Red Hots candies
  • 1 pouch (6 oz.) liquid pectin

Directions
  1. Wash and sterilize canning jars and lids. You will need four half-pint jars. Prepare boiling water-bath canner.
  2. In large heavy saucepan, combine juice and sugar. Stir well. Add margarine and candies. Bring to a rolling boil over high heat, stirring constantly. Stir in liquid pectin. Return to a rolling boil, stirring constantly, and boil 1 minute. Remove from heat.
  3. Skim foam from top of mixture with a large metal spoon. Fill sterilized jars leaving 1/4 inch headspace. Wipe jar rims and adjust two-piece caps. Process in water-bath canner for 10 minutes to seal. Carefully remove jars and set on dishtowels in draft-free place to cool.
