How to make it

  • Beat egg whites until stiff and dry.
  • Beat in sugar gradually, sprinkling 2 tablespoons at a time.
  • Add vanilla and continue beating until mixture holds it shape.
  • Shape in mounds with a spoon or a pastry bag on a large cookie sheet that is lined with parchment paper and lightly sprayed with Pam or greased (Pam is easier).
  • How you shape will be exactly how they look when done baking.
  • I use my huge airbake cookie sheet that is as big as the rack in oven.
  • Bake at 200 degrees for 3-1/2 to 4 hours.
  • You don't want them to get brown on the top or bottom.
  • When they are done, you want to remove them quickly (still warm).
  • Once cooled, put them in an airtight container.
  • They are fragile so pack them gently.
  • Recipe makes 30 large or 60 small.
  • These are a very sweet cookie.
  • If you are a diabetic, please use Splenda or another type of diabetic friendly sugar.

    DO NOT USE SPLENDA... i tried it with a different, but very similar meringe recipe and they came out more like wafers and tasted a lot like eggs...

    These are my grandpa's favorite cookie and he used to make them perfectly but now that he has Alzheimers he can't make them any more and my mom never makes them right I will have to try your grandma's trick on cooking them so I can make them for my grandpa.
