GINGER AND LEMON SHORTBREAD

- 6 oz plain flour shopping list
- 5 ml spoon (teaspoon) ginger shopping list
- 4 oz butter (soft) shopping list
- 2 oz castor sugar shopping list
- Grated rind of 1 small lemon shopping list
- Castor sugar, to dredge shopping list
How to make it
- Sieve flour and ginger together into a bowl
- Rub in the butter until mixture resembles fine breadcrumbs
- Add castor sugar and lemon rind
- Knead on a lightly floured surface to form a smooth dough divide in half and roll out
- line 2-18cm (7 inch) flan or cake tins
- Mark each into 8 portions and prick all over with a fork
- Crimp and decorate edges if you wish
- Bake in the middle of oven 150c/gas 2 for 45-50 min's
- (don't over cook, should be pale gold)
- Leave to cool slightly before lifting onto a wire tray
- Sprinkle with castor sugar

Vivian, I cannot believe this one escaped my lemon and ginger obsessed eye. This sounds just divine. Each evening I have a cup of decaffienated lemon ginger tea, the blend of flavors is perfect.
