Ingredients

How to make it

  • Sieve flour and ginger together into a bowl
  • Rub in the butter until mixture resembles fine breadcrumbs
  • Add castor sugar and lemon rind
  • Knead on a lightly floured surface to form a smooth dough divide in half and roll out
  • line 2-18cm (7 inch) flan or cake tins
  • Mark each into 8 portions and prick all over with a fork
  • Crimp and decorate edges if you wish
  • Bake in the middle of oven 150c/gas 2 for 45-50 min's
  • (don't over cook, should be pale gold)
  • Leave to cool slightly before lifting onto a wire tray
  • Sprinkle with castor sugar

    Vivian, I cannot believe this one escaped my lemon and ginger obsessed eye. This sounds just divine. Each evening I have a cup of decaffienated lemon ginger tea, the blend of flavors is perfect.
