Ingredients
  • 8 ounce package wide egg noodles
  • 2 Tbsp butter
  • 1 large onion, chopped (or use 1/2 a large sweet onion)
  • 2 eggs, beaten
  • 1 tsp salt
  • 1/2 tsp nutmeg (or to taste, less for my family)
  • 8 slices bacon, cooked crisp then crumbled
  • 2 cups diced Swiss cheese
  • 1/2 cup grated Parmesan cheese

Directions
  1. Preheat oven to 375.
  2. Cook noodles according to package directions, then drain.
  3. While noodes are cooking, melt butter in a small saucepan and cook onion in melted butter until it is transparent.
  4. Combine eggs, salt and nutmeg in a large bowl.
  5. Once noodles are done and throughly drained, add noodes, the butter and onion mixture, and the cheeses to the egg mixture in the large bowl.
  6. Turn out into a 2 quart baking dish.
  7. Bake 45 minutes (should be golden brown).
