Basic Brine Recipe
This is a basic brine I have used for a long time. Can add herbs and spices if desired(lemon,bayleaf,peppercorns)

Ingredients
  • 1/4c kosher salt
  • 1/4c packed brown sugar
  • 4c hot water

Directions
  1. In med bowl,combine the salt,sugar and water
  2. Whisk vigorously until all salt and sugar is dissolved.
  3. Allow to cool
  4. Pour mixture over meat,poultry or fish that you are preparing
  5. Soak several hours or overnightn the refrigerator(Make sure meat is fully submerged and make more brine by convertingthe recipe as needed.
  6. Times for brining:
  7. Shrimp-30 mins
  8. Whole Chicken(4lbs)-8-12 hrs.
  9. Chicken parts-11/2 hrs.
  10. Cornish game hen-2 hours
  11. Turkey(12-14lbs-24 hrs
  12. Pork Chops(11/4 to11/2" thick) 1-2 days
  13. Whole pork tenderloin-12 hrs
  14. Whole pork loin-4 hrs.

Mmmmm. We brine and smoke a turkey every Thanksgiving, and everyone LOVES it!! Only time I've never had leftover bird.
We add Thyme, Sage, oranges, and lemons to ours. Gives it a wonderful flavor.
