Baked Goat Cheese With Roasted Vegetable In Phyllo Baskets

- 8 sheets of 18 x 12 inches phyllo dough shopping list
- 1/4 cup melted butter or olive oil shopping list
- 2 red peppers cut up and roasted shopping list
- 2 yellow peppers cut up and roasted shopping list
- 1 large white onion peeled and sliced and roasted shopping list
- 12 large basil leaves cut into chiffonade shopping list
- olive oil as needed shopping list
- salt and cracked black pepper to taste shopping list
- 36 grape tomatoes roasted shopping list
- 2, 4 oz goat cheese plain and sliced into equal 12 rounds shopping list
- Garnish shopping list
- 1/8 cup pine nuts toasted shopping list
- 3 Tbs capers shopping list
- high quality balsamic vinegaer as needed shopping list
- greens for garnish such as arugala shopping list
How to make it
- Roast the vegeatables and set aside. ( see my recipe recently posted: easy roasted root vegetables recipe as a guide on how to roast vegetables )
- Butter each sheet of phyllo until you have 4 layers of phyllo
- Cut layers into evenly measure squares of 6 and place each into a muffin tin, crimping edges to form a ruffled look.,
- Repeat this process again with 4 more remaing sheets of phllo so you will have 12 muffin tins of phyllo
- Bake 350F until baskets are golden
- Toss the already roasted onions and peppers with oil oil, salt and pepper and the basil if not already seasoned
- Divide among the 12 phyllo muffin cups.
- Top each with a round of goat cheese
- Return to oven and bake until cheese is soft and slightly toasted for a few more minutes.
- To serve:
- Drizzle 6 plates with ribbons of the balsamic vinegar. Place 2 baskets on plate over some greens
- Top each basket with some chopped grape tomatoes, capers and basil.
- Serve warm
