How to make it

  • Saute the onion, carrots and parsley in the heated oil until soft.
  • Add the garlic and cook 1 to 2 min.longer.
  • Stir in the spinach leaves, tomatoes, sugar, if used, broth, water, rice and seasonings.
  • Bring to boiling. Reduce heat and simmer, covered, for 40 min. Stir occasionally to prevent sticking.
  • Transfer to serving bowl. Serve with grated Parmesan cheese.

    Hey, how are things in Glendale? I'm in Tucson. My hubby sez it's too hot in AZ to eat soup. I beg to differ. I agree with the group, that "Soup is Good Food." This also appears very nourishing.
