  • CAKE:-
  • 1 pkg Spice cake mix + the ingredients called for on the pkg
  • 1/2 cup finely chopped pecans
  • .
  • COCONUT-PECAN FILLING:-
  • 1/2 cup light corn syrup
  • 3/4 cup sugar
  • 1/2 cup evaporated milk
  • 1/2 cup (1 stick) butter
  • 3 egg yolks - slightly beaten
  • 1 tsp vanilla
  • 1 1/3 cups flaked coconut
  • 1 cup finely chopped pecans
  • Makes 2 1/4 cups
  • .
  • CHOCOLATE FROSTING:-
  • 1 pkg (3ozs) cream cheese - softened
  • 1/4 cup light corn syrup
  • 2 Tblspn butter
  • 2 cups icing sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp vanilla
  • Makes 1 1/3 cups

Directions
  1. CAKE:-
  2. Pre-heat oven to 350 degrees
  3. Grease & flour 2 - 9 inch round cake pans
  4. Prepare cake batter as pkg directions
  5. Stir in pecans
  6. Pour into cake pans & bake as directed
  7. Cool in pans on wire racks for 10 mins & then turn out on to racks to cool completely
  8. When cool, split both cake layers into two horizontally to make 4 layers
  9. .
  10. FILLING:-
  11. In saucepan mix corn syrup, milk, butter, egg yolks & vanilla
  12. Cook & stir over medium heat until thickened - 10-12 mins
  13. Remove from heat & stir in the pecans & coconut
  14. Cool until thick & spreadable
  15. .
  16. CHOCOLATE FROSTING:-
  17. In a bowl, beat cream cheese, corn syrup & butter until creamy
  18. Sift together icing sugar & cocoa
  19. Beat in to cream cheese mixture with the vanilla until frosting is of spreading consistancy
  20. .
  21. ASSEMBLY:-
  22. Place 1 cake layer on serving plate, cut side up
  23. Spread with 1/3 pecan/coconut filling
  24. Top with 2nd cake layer
  25. Spread with about2/3 cup of chocolate frosting
  26. Top with 3rd cake layer
  27. Spread with 1/3 of filling
  28. Top with 4th cake layer - cut side down
  29. Frost the sides of the cake with the remaining chocolate frosting
  30. Spread the last 1/3 of the filling over the top
  31. Refrigerate until set - about 2 hrs

  33. NOTE:-
  34. Cooking time is estimated & includes cake & filling
