Pecan Spice Cake

- CAKE:- shopping list
- 1 pkg spice cake mix + the ingredients called for on the pkg shopping list
- 1/2 cup finely chopped pecans shopping list

- coconut-PECAN FILLING:- shopping list
- 1/2 cup light corn syrup shopping list
- 3/4 cup sugar shopping list
- 1/2 cup evaporated milk shopping list
- 1/2 cup (1 stick) butter shopping list
- 3 egg yolks - slightly beaten shopping list
- 1 tsp vanilla shopping list
- 1 1/3 cups flaked coconut shopping list
- 1 cup finely chopped pecans shopping list
- Makes 2 1/4 cups shopping list

- CHOCOLATE FROSTING:- shopping list
- 1 pkg (3ozs) cream cheese - softened shopping list
- 1/4 cup light corn syrup shopping list
- 2 Tblspn butter shopping list
- 2 cups icing sugar shopping list
- 1/3 cup unsweetened cocoa powder shopping list
- 1/2 tsp vanilla shopping list
- Makes 1 1/3 cups shopping list
How to make it
- CAKE:-
- Pre-heat oven to 350 degrees
- Grease & flour 2 - 9 inch round cake pans
- Prepare cake batter as pkg directions
- Stir in pecans
- Pour into cake pans & bake as directed
- Cool in pans on wire racks for 10 mins & then turn out on to racks to cool completely
- When cool, split both cake layers into two horizontally to make 4 layers

- FILLING:-
- In saucepan mix corn syrup, milk, butter, egg yolks & vanilla
- Cook & stir over medium heat until thickened - 10-12 mins
- Remove from heat & stir in the pecans & coconut
- Cool until thick & spreadable

- CHOCOLATE FROSTING:-
- In a bowl, beat cream cheese, corn syrup & butter until creamy
- Sift together icing sugar & cocoa
- Beat in to cream cheese mixture with the vanilla until frosting is of spreading consistancy

- ASSEMBLY:-
- Place 1 cake layer on serving plate, cut side up
- Spread with 1/3 pecan/coconut filling
- Top with 2nd cake layer
- Spread with about2/3 cup of chocolate frosting
- Top with 3rd cake layer
- Spread with 1/3 of filling
- Top with 4th cake layer - cut side down
- Frost the sides of the cake with the remaining chocolate frosting
- Spread the last 1/3 of the filling over the top
- Refrigerate until set - about 2 hrs

- Cooking time is estimated & includes cake & filling
