How to make it

  • Beat cream cheese with hand mixer until smooth, add icing sugar and beat until well blended.
  • Beat whipped cream and sugar until soft peaks form.
  • Add whipped cream mixture to cheese mixture together with zest of 1 lemon and the lemon juice squeezed from the lemon and beat all together until well blended.
  • Refrigerate for at least 2 hours or overnight. Keeps well for up to 3-4 days.
  • Serve with fresh, seasonal fruit.

    Really, I didn't realize it was old. I borrowed it from a co-worker who brought it to a pot luck and it was so good! Glad I "found" it again for you.
