Tabbouleh Salad

- 1 cup bulgur wheat shopping list
- 2 cups boiling water shopping list
- 2 medium tomatoes, diced shopping list
- 1 medium onion, chopped shopping list
- 4 scallions, minced shopping list
- 2 cups flat leaf parsley, minced shopping list
- 1/4 cup fresh lemon juice shopping list
- 1/4 cup olive oil shopping list
- 1 cup fresh mint, minced shopping list
- salt and pepper to taste shopping list
How to make it
- In a medium sauce pan, bring water to full boil.
- Remove from heat.
- Add bulgur, cover with tight fitting lid, and allow to stand for 20 to 30 minutes.
- Drain excess water.
- Add remaining ingredients to bulgur
