Albuquerque Turkey Steaks

- 1 pound turkey breast steaks shopping list
- 2/3 cup all purpose flour shopping list
- 1/2 teaspoon paprika shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- boiling water shopping list
- 1/2 cup sun dried tomatoes not packed in oil shopping list
- 2 teaspoon butter shopping list
- 2 teaspoon olive oil shopping list
- 3 large cloves garlic crushed shopping list
- 1 cup chopped white onion shopping list
- 1 cup grated carrots shopping list
- 2-1/2 cups canned ready cut peeled tomatoes shopping list
- 1/2 cup white wine shopping list
- 1 tablespoon chopped cilantro shopping list
- 2 teaspoon lime juice shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2-2/3 cups cooked rice shopping list
- 1/2 cup sour cream shopping list
- cilantro sprigs shopping list
How to make it
- Place steaks between layers of waxed paper and pound until flattened in shallow dish.
- Combine flour, paprika, salt and pepper then lightly moisten cutlets with water and dredge in flour.
- Refrigerate 30 minutes to allow coating to set.
- In medium bowl pour boiling water over tomatoes and set aside in large skillet.
- Heat butter and olive oil then sauté garlic, onion and carrots until onion is translucent.
- Stir in canned tomatoes and wine then turn heat up and allow sauce to boil and reduce slightly.
- Drain sun dried tomatoes then cut into thin strips and add to sauce.
- Stir in remaining ingredients except sour cream.
- Turn heat to low then stir to combine flavors.
- Preheat oven to 350 then heat skillet coated with nonstick spray and sear to brown both sides. Arrange browned steaks in single layer on shallow baking dish.
- Top with prepared sauce and cover dish with foil then bake 20 minutes.
- Arrange steaks and sauce over rice and dollop with sour cream garnished with sprigs of cilantro.
