  • 1 pound turkey breast steaks
  • 2/3 cup all purpose flour
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Boiling water
  • 1/2 cup sun dried tomatoes not packed in oil
  • 2 teaspoon butter
  • 2 teaspoon olive oil
  • 3 large cloves garlic crushed
  • 1 cup chopped white onion
  • 1 cup grated carrots
  • 2-1/2 cups canned ready cut peeled tomatoes
  • 1/2 cup white wine
  • 1 tablespoon chopped cilantro
  • 2 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2-2/3 cups cooked rice
  • 1/2 cup sour cream
  • Cilantro sprigs

Directions
  1. Place steaks between layers of waxed paper and pound until flattened in shallow dish.
  2. Combine flour, paprika, salt and pepper then lightly moisten cutlets with water and dredge in flour.
  3. Refrigerate 30 minutes to allow coating to set.
  4. In medium bowl pour boiling water over tomatoes and set aside in large skillet.
  5. Heat butter and olive oil then sauté garlic, onion and carrots until onion is translucent.
  6. Stir in canned tomatoes and wine then turn heat up and allow sauce to boil and reduce slightly.
  7. Drain sun dried tomatoes then cut into thin strips and add to sauce.
  8. Stir in remaining ingredients except sour cream.
  9. Turn heat to low then stir to combine flavors.
  10. Preheat oven to 350 then heat skillet coated with nonstick spray and sear to brown both sides. Arrange browned steaks in single layer on shallow baking dish.
  11. Top with prepared sauce and cover dish with foil then bake 20 minutes.
  12. Arrange steaks and sauce over rice and dollop with sour cream garnished with sprigs of cilantro.
