This dish puts a sweet spin on a regular piece of chicken. Great for afternoon of grilling.

Ingredients
  • 3/4 cup firmly packed dark brown sugar
  • 1/2 cup bottled Italian dressing
  • 1/2 cup pineapple juice
  • 2 tablespoons chopped fresh mint
  • 1 1/2 teaspoons grated fresh ginger
  • 6 boneless, skinless chicken breast halves
  • crushed red pepper flakes to taste

Directions
  1. In a small bowl, combine all ingredients except chicken.
  2. In a large, shallow baking dish or plastic bag, pour 1 cup marinade
  3. over chicken; turn to coat.
  4. Cover or close bag and marinated in the refrigeratorup to 3 hours. Refrigerate remaining 3/4 cup marinade.
  5. Remove chicken from marinade, discarding marinade. Grill chicken, brushing with refrigerated marinade, until chicken is no
  6. longer pink
  7. Serve with wedges of grilled pineapple.
