Taste of the Islands Chicken

This dish puts a sweet spin on a regular piece of chicken. Great for afternoon of grilling.
Ingredients
- 3/4 cup firmly packed dark brown sugar shopping list
- 1/2 cup bottled Italian dressing shopping list
- 1/2 cup pineapple juice shopping list
- 2 tablespoons chopped fresh mint shopping list
- 1 1/2 teaspoons grated fresh ginger shopping list
- 6 boneless, skinless chicken breast halves shopping list
- crushed red pepper flakes to taste shopping list
How to make it
- In a small bowl, combine all ingredients except chicken.
- In a large, shallow baking dish or plastic bag, pour 1 cup marinade
- over chicken; turn to coat.
- Cover or close bag and marinated in the refrigeratorup to 3 hours. Refrigerate remaining 3/4 cup marinade.
- Remove chicken from marinade, discarding marinade. Grill chicken, brushing with refrigerated marinade, until chicken is no
- longer pink
- Serve with wedges of grilled pineapple.
