Fruit Cocktail Bread Recipe
This is a moist, fruity bread that I love to make because it is so easy. It's really great toasted and buttered! The friend who gave me this recipe told me she has used other canned fruits in place of the fruit cocktail.

Ingredients
  • 3 cups all-purpose flour
  • 2/3 cup sugar
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 1 (8 oz.) lemon yogurt
  • 1/3 cup vegetable oil
  • 1 teaspoon grated lemon peel
  • 1 (15 oz.) can fruit cocktail, drained
  • 3/4 cup chopped walnuts or pecans

Directions
  1. Preheat oven to 350 degrees. Grease a 9 x 5-inch loaf pan.
  2. Combine flour, sugar, and baking soda
  3. Blend eggs with yogurt, oil, and lemon peel. Add dry ingredients and the fruit and nuts, stir to just blend. Spoon into pan.
  4. Bake 60 to 70 minutes or until pick inserted in center of the loaf comes out clean. Let stand in pan for 10
  5. minutes. Then cool completely on a wire rack.
