Ingredients

How to make it

  • 1) In a bowl thoughly mix ground chicken, bacon, corn, garlic, cumin and bread crumbs
  • 2) Slice peppers in even halves and remove seeds and pith
  • 3) Take chicken mix and fill pepper cavity and place pepper side up in a backing dish sprayed with PAM
  • 4) Open jar of queso and pour over top of peppers (use about half a jar)
  • 5) Bake in a pre-heated 350 oven for 30 to 40 min
  • Remove and let rest 5 min
  • Server with a rice and pea mix mixed with left over queso

    Are the anaheims raw or roasted and peeled? If raw, do you have to peel them after cooking or just not eat the skin? TIA

    These sounds great...might try this with venison, as I don't really eat ground chicken, but what a great sounding recipe...mind if I make my own chili con queso, too? :) Thanks so much for sharin', RR! :)
