Raisin and Pecan Sweet Potato Bread

- 2 1/3 cups sugar shopping list
- 2/3 cups water shopping list
- 2/3 cup oil shopping list
- 4 eggs shopping list
- 2 cups mashed sweet potatoes shopping list
- 3 1/3 cups all-purpose flour shopping list
- 2 teaspoons baking soda shopping list
- 1 1/2 teaspoons salt shopping list
- 1 teaspoon cinnamon shopping list
- 1/2 teaspoon baking powder shopping list
- 1 cup coarsely chopped pecans shopping list
- 1 cup raisins shopping list
How to make it
- Preheat oven to 350 degrees F. Grease two 9 x 5-inch loaf pans.
- Combine sugar, water, oil, eggs, and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine. Add pecans and raisins and mix well. Divide between 2 loaf pans.
- Bake for 50 minutes. Cool in pan to room temperature.
