Panera Cinnamon Raisin Bread Pudding Recipe

Ingredients
  • 1/2 cup raisins or other dried fruit like cranberries, apricots etc
  • 1/2 cup orange juice or other fruit juice or sweet liquid ( apple juice or cranberry juice etc )
  • 8 slices of cinnamon raisin bread cut in 1 inch cubes
  • 3 Tbs melted butter plus extra to brush pans
  • 2 cups milk
  • 3 large eggs
  • 1/3 cup sugar
  • 1 tsp pure vanilla
  • dash salt

Directions
  1. Soak raisins in orange juice and set aside
  2. Toss bread cubes in melted butter
  3. Place on cookie sheet and toast in oven until golden ( 350F )
  4. Cool and place in casserole dish
  5. Top with the soaked raisins and distribute evenly
  6. Whisk eggs, salt, sugar and vanilla.
  7. Pour over bread
  8. Chill 15 minutes
  9. Place dish on a baking sheet and bake in 350 oven 30 to 35 minutes until center is set
  10. Remove from oven and cool 15 minutes before serving
  11. Note: may be baked in 6 buttered ramekins instead of a 2 qt casserole dish
