Ingredients

How to make it

  • In lrg. saucepan over med. heat, saute onion & zucchini in margarine
  • until vegetables are crisp-tender.
  • Remove frozen Lima beans from pouch: add to sauteed vegetables.
  • Stir in remaining ingredients.
  • Simmer, stirring occasionally, about 15 mins. OR until vermicelli is tender but still firm.
  • MICROWAVE DIRECTIONS: In 6 qt. casserole, melt margarine. Stir in
  • onion & zucchini; microwave on HIGH for 3-4 mins. OR until vegetables
  • are crisp-tender. Stir in remaining ingredients as directed above.
  • Microwave on HIGH for 15-20 mins. OR until vermicelli is tender but
  • still firm.
  • MARILYN'S NOTES:
  • I added the corn, green beans, peas & carrots to the original recipe.
  • Couldn't find the Baby Lima Beans in Butter Sauce, so used 10 oz. of
  • Butter Beans. Next time I'd only use 5 oz. Couldn't find cans of Beef
  • Broth, so used the boxed kind and used 3/4 of the carton. Couldn't
  • find Vermicelli, so used Capalini and I think that was perfect. Forgot
  • to put in Cayenne Pepper, would add next time for a bit more zing!
  • Instead of 1 1/2 cups Water, I put in 8 ozs. of water. I doubled all
  • spices. I forgot to saute the zucchini. I put everything in my
  • largest casserole (not nearly big enough...need at least 6 qt.
  • casserole) and thought I followed the microwave directions...the soup was not nearly done after 4 mins. (that's how long I thought it was supposed to take! Silly me! I didn't read all of the directions, apparently.). Anyhow, by this time it was 8 pm (hubby had gone on errands
  • and went grocery shopping for me...which is probably why he couldn't
  • find things...can't imagine Wegman's not having all of those
  • ingredients! So, put everything in my soup pot (8 qt.) and next
  • day brought the soup to a boil, then simmered for 2-3 hrs. (forgot to
  • time it!) But you want the veggies to be fork tender and the pasta
  • cooked! The butter beans didn't cook thoroughly enough for us.
  • But, the soups tasted great and would make again! I would not make
  • microwave cause I don't have a big enough micro-wave safe casserole or
  • pot. This was very easy to prepare...I think it took under 5 mins. to
  • prepare it. ~spartica

    I believe you asked why your recipe has lines throughout. I feel you may have entered the directions as one long paragraph . The lines are automatically generated by the software used by group recipes as there are only so many letters allowed per line. Try this--Take lines 11(Marilyn's Notes) to the end and submit this as a comment. You will see the difference. BTW the recipe is great.

    Hi, Marriage! I'm glad you are going to make this. It is a good soup for beginners. Please let me know how it turns out! My recipe makes a ton of soup, so make sure you have freezer containers handy!
