This is a great meal served along with veggie side dish, hot bread to soak up the gravy......yum!

Ingredients
  • 6-8 cleaned squirrels or 2-3 cleaned rabbits, cut into pieces
  • 2 large onions, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, chopped or to suit your own taste
  • flour to coat pieces of meat
  • salt, pepper, and creole seasoning (I use LeBlanc's)
  • 2 cups of water
  • cooking oil to coat bottom of heavy, oven proof skillet(preferably cast iron)

Directions
  1. Season meat with seasonings
  2. Dredge in flour to coat
  3. Brown in batches and remove
  4. Add chopped onions and bell peppers
  5. Saute until soft, add garlic
  6. Add meat back to pot, along with the water
  7. Add a little more seasoning
  8. Put lid on and bake for 2 1/2 hours on 350 degrees.
  9. YOu can also cook this on top of the stove on a low fire for a few hours, until meat is tender.
  10. Serve with rice and ENJOY!
