Ingredients

1/2 Cup Spry

1 Cup Sugar

1 Cup Honey

2 Eggs

2-1/2 Cups Flour

1 Teaspoon Ginger

1 Teaspoon Cinnamon

1/2 Teaspoon Allspice

2 Teaspoons Baking Powder

1 Cup Coffee mixed with 1 Teaspoon of Baking Soda

Grated Rind & Juice of 1 Orange

Chopped Nuts

Raisins

Directions

Heat oven to 325 degrees.

Sift together 2 1/2 cups flour, 1 tsp. ginger, 1 tsp. cinnamon, 1/2 tsp. allspice, 2 tsps. baking power.

Mix together spry, sugar and honey.

Then add eggs and mix thoroughly.

Add rind.

Alternately add dry ingredients and liquids.

If you wish, add raisins and nuts.

I just posted a honey cake recipe and then it occurred to me to check and see if there were already some posted. Yours looks really good and I'm going to have to try it soon. A little different than mine (maybe better?).
