A Mummy Stromboli

- 1 can (13.8 oz) refrigirated pizza crust, defrosted, OR use your own pizza crust recipe shopping list
- 3 tbsp. chive-and-onion spreadable cream cheese (you can use any other spreadable cheese you like, or even mayo) shopping list
- 5 oz. thinly sliced deli ham shopping list
- 5 oz. thinly sliced deli turkey shopping list
- 1 sweet red bell pepper, julienned and seeds removed (omit the pepper if your kids don't like it) shopping list
- 4 oz. thinly sliced smoked provolone cheese, OR smoked mozzarella shopping list
- 1 egg, beaten shopping list
- 1 tbsp. grated parmesan cheese shopping list
- 1 pitted black olive, sliced in half shopping list
How to make it
- Sautee the sweet red pepper strips in about 2 tbsp. of oil in a skillet, until caramelized and slightly browned. Set aside.
- Spray baking pan with cooking spray and unroll the pizza crust onto it. Stretch the dough into a rectangle to about 11 inches wide and 14 inches long and press to sides.
- Spread chive-and-onion cream cheese down the center of your rectangle in a 3-inch wide strip, leaving 1/2 inch space on the top and bottom ends.
- Layer 2/3 of ham, turkey and cheese slices on top of the cream cheese strip. Repeat the layers with the remaining meats and cheese.
- Arrange the pepper strips on top, placing a few extra ones where the head will be.
- Slice 3 inch long slits into the sides of the dough, 1 1/2 inches apart.
- Fold and shape a 3 inch section of dough over filling to make a rounded head, leaving opening for eyes by exposing the bell pepper. (Seal the whole sandwich if not making a mummy).
- Starting at mummy's neck, alternately cross remaining strips over filling. Fold the bottom 1/2 inch up before crossing last 2 strips.
- Brush the beaten egg over dough. Sprinkle parmesan cheese on top.
- Bake in a preheated 400F oven for 15 to 20 min, or until golden brown. Place olive slices into opening for mummy's eyes. Let cool for 10 min., then cut in slices.
- For a vegetarian version fill with sauteed mushrooms, onions, spinach and cheese.
