How to make it

  • Preheat oven to 375 degrees. Put the dry ingredients in on bowl and stir with a whisk.
  • Put wet ingredients in another bowl and whisk until smooth. Dump the wet ingredients into the dry ingedients and stir with a rubber spatula until the flour is moistened, but batter is still a bit lumpy. Scrape the batter into a greased 9 x 9 baking dish.
  • Combine the ingredients for cinnamon swirl. Sprinkle it on top of the cake, and use a knife to swirl through the batter.
  • Mush the streusel ingredients together with your fingers to make a paste. Drop raisin sized pieces of streusel all over the top of the batter.
  • Bake 30-35 minutes or until the cake is golden brown and solid.

    I baked the Jo Cake last night--delicate texture,a beautiful and delishus treat.
    Changed around a bit. I used half a cup of tofutti's "better than sour cream", 1 cup rice milk with 2 t. vinegar, and used only 1 egg. And now I wonder about all the homemade cakes with the buttermilk and/or sour cream, and think I know how they taste!! This cake is a keeper for sure. Oh, one more thing, on the streusel, I used 2 T. butter, 1 T cinnamon, a small pile of sliced almonds, and 3 T. flour, and instead of sugar, I squeezed some honey into the streusel. Mushed it all up, and spread it around the top of the cake.

    very very nice cake. (Jo is the oldest daughter in "Little Women". any connection?? anyhoo, thanks for a yummy treat recipe!!
