Spicy Scallops With Capellini Recipe
Simple delicious scallops are close to the Pil-Pil sauce of Chile. Dried red hot chilies are a must.

Ingredients
  • 1 lb scallops, 1/4 if large
  • 6 tbls. ev olive oil
  • 1/4 cup dry white wine
  • 2 tbls. flat-leaf parsley chopped fine
  • 1 tbls. minced garlic
  • 1 small dried chipotle chile with seeds, stemmed and finely chopped
  • sea salt
  • 1/2 lb capellini pasta

Directions
  1. Bring salted water to boil in pot. In baking dish toss scallops with olive oil, wine ,parsely, garlic and chipotle. Season with salt bake for 15 min. or until scallops are firm. Add capellini to boiling water until al dente. Drain pasta place in serving bowl Add scallops and all juices from baking dish.toss well and serve immediately.

Sounds like a dish that is simple but loaded with flavor. I am a major scallop (and chipotle) fan, so this is very interesting to me. I'm bookmarking it and I will report back when I've made it. Thank you so much. =)
