Buffalo Chicken Soup

- 1 sm. onion - chopped shopping list
- 2 ribs celery - chopped shopping list
- 1/4 cup butter OR margarine shopping list
- 1/4 cup all-purpose flour shopping list
- 3/4 cup milk ( increase to 1 1/2 cups if you prefer a thiner soup) shopping list
- 3/4 cup chicken broth shopping list
- 2 cups diced, cooked chicken shopping list
- 1/4 - 1/2 cup buffalo wing sauce - to taste shopping list
- 4 oz. process cheese food (Velveeta®) - cubed, low-fat okay shopping list
- 1/2 tsp. cayenne pepper shopping list
- 1/2 tsp. celery salt shopping list
- 1/2 tsp. garlic salt shopping list
How to make it
- In a 2-quart saucepan over medium-high heat, cook onions and celery in butter until tender.
- -Stir flour into pan; slowly whisk in milk and broth.
- -Stir in remaining ingredients and simmer over medium-low heat, stirring occasionally, until the cheese has melted.
- Notes: Serve this with celery sticks and Ranch or Bleu Cheese Salad Dressing on the side.
