Spinach And Ricotta Pesto Recipe
This is a very tasty pesto sauce with a nice cheesy and nutty taste. Great blend of flavors. Enjoy

Ingredients
  • Spinach and Ricotta Pesto
  • 2 tablespoons walnuts
  • 1/2 pound spinach washed and trimmed
  • 1 small clove garlic coarsely chopped
  • 2 tablespoons olive oil
  • 1/2 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Place walnuts, spinach and garlic in work bowl of a food processor.
  2. Process until finely chopped scraping sides of bowl as necessary.
  3. With motor running pour in olive oil until a smooth paste forms.
  4. Scrape mixture into a medium bowl and stir in ricotta, parmesan, salt and pepper.
