Italian Eggplant

- 1 medium eggplant, pared and cut in 1/2-inch slices shopping list
- 1/2 cup butter or margarine, melted shopping list
- 3/4 cup fine dry bread crumbs shopping list
- 1/4 teaspoon salt shopping list
- 1 8- or 10 3/4-ounce can spaghetti sauce with mushrooms shopping list
- 1 tablespoon dried oragno, crushed shopping list
- 4 ounces mozzarella cheese, shredded (1 cup) shopping list
How to make it
- Dip eggplant in butter, then in mixture of bread crumbs and salt.
- Place on greased baking sheet.
- Spoon sauce atop each slice; sprinkle with oregano and cheese.
- Bake in hot oven (450) degrees 10 to 12 minutes or till done.
- Makes 4 or 5 servings.
