How to make it

  • Scrub or scrape 1 1/2 pounds tiny new potatoes.
  • Cook in boiling salted water 15 to 20 minutes; drain.
  • Peel if desired.
  • Meanwhile, melt 1/4 cup butter in saucepan; stir in 1/4 cup snipped parsley and 1 tablespoon lemon juice.
  • Pour over hot potatoes.
  • Serves 4 to 6.

    I love these. When my daughter was starting to eat table food, I found little marble sized new potatoes at the famers market. I'd fix them like this and she could feed herself.
