Blueberry Corn Bread Recipe
This is a very unique and very tasty blueberry cornbread. I made it with hesitation thining it wouldn't work but it does and it is very good and very moist. Give it a try.

Ingredients
  • 1 cup corn meal
  • 1-1/2 cups sifted four
  • 1/4 cups sugar
  • 2 teaspoon baking powder
  • 1-1/2 cups milk
  • 2 beaten eggs
  • 1/4 cups melted shortening
  • 1 cup blueberries

Directions
  1. Mix corn meal, flour, sugar and baking powder.
  2. Stir in remaining ingredients and mix well.
  3. Fold in blueberries.
  4. Grease electric skillet and preheat to 250.
  5. Pour in batter then cover and cook with vent open for 25 minutes.

This sounds good! This will be a pleasant change from plain corn bread.


It truly is a pleasant surprise from the ordinary. I made it with raspberries and it wasn't so great, but the blueberries are awesome. Enjoy.
