Easy Delicious Curry Pumpkin Soup Recipe
Saw this in the paper, made it and wow!!! Flavors are devine. Simple ingrdients and easy and so gourmet tasting!

Ingredients
  • 3 cups canned cooked pumpkin or squash- plain
  • Or your own precooked and pureed pumpkin or butternut or acorn sqaush
  • 3 cups chicken broth or vegetable broth for vegetarians
  • 1/4 cup maple syrup
  • 2 tsp curry powder or more to taste
  • 1 tsp cinnamon
  • 1/2 tsp each: nutmeg, salt and ginger
  • 1 cup cream
  • Garnish: toasted pumpkin seeds or a dollop of sour cream

Directions
  1. Place all but cream into a pot and just heat up.
  2. Then stir in cream and correct seasonings if desired ( that is add a bit more curry powder )
  3. Place in bowls and garnish if desired.
  4. ENJOY !!!

Would any other squash work as well do you think? I have an aversion to pumpkin!

Anything thick and pureed squash such as , acorn,or butternut, or a thick skinned winter squashes.
Oh yeah and sweet potatoes/yams also would be divine too!
