Pan Seared Sea Scallops With Tequila And Lime Recipe
PAN SEARED SEA SCALLOPS WITH TEQUILA AND LIME I obtained this recipe from Sammy Hagar’s Cabo Wabo Cantina in Lake Tahoe, Nevada. What a fun place to visit. Delicious food and great atmosphere. I will go back.

Ingredients
  • 8 large sea scallops
  • 1 tablespoon olive oil
  • 1 garlic clove thinly sliced
  • 1 shot cabo wabo tequila
  • 1 lime juiced
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste

Directions
  1. In a medium size sauté pan, over high heat, add olive oil and garlic.
  2. When the garlic just starts to brown add seasoned scallops and sear quickly.
  3. Remove scallops and let rest on towel.
  4. Pull pan away from heat then add tequila lime and parsley.
  5. Cook liquid until it reduces by half then remove from heat and stir in butter.
  6. Season sauce with salt and pepper and spoon.
